They say you eat with your eyes first. And this bright, colourful salad is a feast indeed. It starts with succulent roast chicken from Voltigeurs Farms in Quebec, then we add crisp red cabbage and carrots, juicy orange segments and crunchy cashews and sesame seeds. To top it off? A tangy, zippy carrot-sesame-ginger dressing that might just be the star of the show. All in all, a salad we could eat with our eyes – and mouths – just about every day.
